"Dear Ben,

This is to tell you that how much Anne and I enjoyed the day we spent in your kitchen. We’d read your credential, so we were not surprised by your skills as a chef. What we hadn’t expected was your cordiality as a host, students-do-it teaching, and ability to make us feel like master chefs ourselves.

Answering your introductory questionnaire, we asked you to teach us to make a meal that would satisfy both an omnivore and a vegetarian. From your menu, we chose the following: hearts of palm salad, green bean almandine, asparagus soup, grilled vegetable, crab cake, and baked pear.

Your instruction included not only the planning, preparation and timing of each of the six dishes, but also the importance of presentation. You wisely took pictures of us cooking and of the beautiful meal before we began to devour “our” creation. I happily forwarded those pix of the dinner and of her father in a chef’s apron to my daughter- who had graciously given us Chef Ben as present.

You didn’t greet us wearing a gift ribbon, though you were a quite a good one. As a vegetarian, I never foresaw myself as an expert at making your fabulous crab cake, though now I’m a quite good one.

Thank you so much for the photos! You really took some great shots. Patrick and I had a wonderful time Wednesday night and have been enjoying the leftovers (I just finished some of the bisque before sitting down at the computer). You were a patient and knowledgeable teacher and I learned quite a bit just from one lesson.
